Sheik beats Little Mac because she just stands near the edge and waits for his dash attack and then throws him off stage and then either uses the grenade to edge guard or dair spikes him as a mix up and the only thing you have to worry about is if they air dodge but to beat that just make sure you hit them before they air dodge. Also if Little Mac side b's Sheik can just teleport away with up b. This has been verified by my friends Ninjamaster80 (Sheik) vs RoyMain717 (Little Mac) whenever they play

The thing is, if you are a good little mac, you really shouldn't open with a dash attack. It is predictable and punishable if your opponent shields, and, in the case of Shiek, can cause a grab and then several fairs into practically anything.

Just don't let yourself get grabbed and you are more or less fine in this matchup; she can camp you out with needles but shielding them when possible is great. Reading their getups also can help, especially if you get them to a medium-high percent and get off a FSmash or an Up Smash.
