You can just use "auto guard" if you want them to guard again after an attack.
Good stuff. I use Saki fairly often, but I don't ever try many unblockable setups. I should probably pair her with someone with a beam type of special, instead of someone like Jun, the Combo Queen.
this is some basic stuff for saki, but still pretty good for begginers, an for those that want to start with saki, for saki i prefer to pair her with chun-li, megaman or polimar since they have very good assist they give saki a much better setup for her unblockable.

Not bad at all.
Works best for DHC like Zero's Rekkoha into the Saki's Bullet, opponent is mostly blocking the Rekkoha and you can get a free shot right there.
It's also quite convenient to bait character switches into bullet, it's a FREE shot since they can't do anything unless they DHC (but if you CAN shoot against a DHC then it's pretty much a free shot).
Also works against defense pressure, they are shielding and you can just drop the shot anytime and get a free combo after that if you are in the corner. I think they can only get away from it using Advance Guard (and even sometimes they can't just evade the shot).
